Whey is often thrown out in the cheesemaking process and the team wanted to find a way to repurpose the excess. So, armed with a welding rod, an old beer keg and a lot of internet research, they began trying to convert it into palatable alcohol.
All the gin botanicals are vapour-infused, which isn’t done very often in Australia. It gives it a delicate, subtle bouquet — petals, citrus, a hint of fresh-cut hay.
